A hearty aromatic lamb stew, with peal barley and 4 different lentils –split chickpea, split moong, split pigeon peas and split red. Finished with zesty lemon, coriander. The ingredients list is long and it takes hours to cook but this is a really special dish originating in the royal palaces of Saudi Arabia – and now eaten at religious celebrations.
